Unleavened Chicken Salad

Tom Dynan, the owner of Unleavened Fresh Kitchen, makes a standout chicken salad.


1C Mayo, Hellman's
2 T Honey
2 T Chia Seeds
½ T White Vinegar
½ t Cardamom, ground
½ t Lemon Juice
¼ C Golden Raisins
¼ C Currants, dried
3 C Chicken Breast, grilled, approx. 6 breasts, medium dice
¼ C Green Onion, chopped
¼ C Celery, small dice
to taste Kosher Salt
to taste Black Pepper, fresh cracked


1. Grill/cook Chicken Breast and cut medium dice, cool.

2. Combine all ingredients and mix well.

3. Taste for seasoning.

4. Add water as needed for desired consistency.

Yields Approx.: 4-6 people
