Best ways to use your Thanksgiving leftovers with a creative twist. Start with your family’s roast turkey and stuffing recipe, and your favorite cranberry sauce.

Pancake Batter: 18 egg whites, beat on high until fluffy

Add:
6 egg yolks
7 cups milk
1-1/2 cups melted butter, cooled
1 tablespoon vanilla
1 cup icing sugar
4 tablespoons baking salt
1 tablespoon kosher salt
9 cups AP flour

Mix egg ingredients together, then fold into the egg whites.

Pumpkin Filling:

Scrape pumpkin pie filling out from leftover pie into a bowl. Do not scrape the pie crust.
Add a small amount of heavy whipping cream until you have a thick paste.
Fill a squeeze applicator.

Instructions:

Preheat griddle on medium heat.
Lightly oil surface.
Scoop pancake portions onto griddle.
Swirl pumpkin filling over the pancakes starting at outer edge and going inwards.
Once pancake is cooked on one size, flip to cook the other side.

Reheat your leftover stuffing, turkey, adding gravy to keep moist.

Take a square of parchment paper, or wax paper and place the pancake on top with the pumpkin side facing up.
Add some of your warm turkey and stuffing and cranberry sauce.
Roll pancake and wrap like a burrito.
Stab with toothpicks and cut in half.
Serve with maple syrup.
