Thai Style Quinoa Salad

Chef Tre Wilcox from Tre Wilcox Cooking Concepts makes a healthy and delicious quinoa salad.

Thai Style Quinoa Salad

1 cup cooked quinoa
1 each red bell peppers, diced
1 each yellow bell peppers, diced
1 each carrot, shredded (1 cup)
1/2 cup red onion, minced
1 cup cooked edamame, shelled
1/4 cup scallions, sliced  
1/3 cup cilantro leaves, washed
1/3 cup mint leaves, washed
1  cup bean sprouts
1 cup canola oil
2 tablespoons peanut butter
2 tablespoons honey
2 teaspoons ginger root, peeled and grated  
4 tablespoons soy sauce
2 tablespoon mirin
3 tablespoons rice vinegar
2 tablespoons lime juice
2 teaspoons toasted sesame oil
1  tablespoon water

Add the cooked quinoa to a medium mixing bowl and mix with remaining ingredients. Make the dressing next.

To make the dressing, add the peanut butter and honey or agave to a medium microwave safe bowl. Heat in microwave for 20 seconds, and add in the ginger, soy sauce, mirin, vinegar, lime juice and sesame oil, and stir until mixture is smooth and creamy. Add in a bit of water if you'd like a thinner dressing.

Serves 6.
