Sweet Potato Soup

Chef Taylor Kearney from Dish shows you how to kick your parties up a notch with a sweet potato soup that's topped with garlic marshmallows.
 

Sweet Potato Soup

3 Large sweet potato, peeled and diced
1 cup  Brown sugar, packed
1/4 cup Balsamic vinegar
2 tbsp Kosher salt
(1) Cold butter

In a large pot add sweet potatoes, salt, and enough water to cover the potatoes by 1 inch. Boil for 30 minutes or until tender. In a blender, add all ingredients and blend until smooth. Garnish with toasted garlic marshmallow. 


Garlic Marshmellow

(3) Egg whites, room temperature
2 cups  Light corn syrup
1/2  tsp Salt
2 cups Powdered sugar
2 tbsp Roasted garlic puree

In an electric mixer, whip egg whites and corn syrup to a soft peak. Fold in all other ingredients  & continue to whip until the mixture has doubled in volume and is stiff.
