Lynae Fearing and Tracy Rathbun from Lovers Seafood & Market stop by Good Day to make stir-fried cauliflower rice. It's delicious but not really rice.
Stir-Fried Cauliflower Rice
2 cups mixed color cauliflower, chopped medium fune
3 tbsp of mix vegetables (zuchinni, yellow squash, carrots)
1 tbsp diced onions
2 tbsp peas
1 tbsp shallots
2 tbsp green onions, chopped
1/2 teaspoon togarashi
1/2 teaspoon chives
1 egg, cooked sunny side up
With glaze (see below)
Make glaze (below). Mix all ingredients above and saute 5 minutes or less. Do not let the vegetables get too soft. Stir in glaze and warm quickly. Top with a sunny-side up egg.
Stir-Fried Rice Glaze
3 tbsp sesame oil
2 tbsp shallots, peeled and minced
2 tbsp garlic, peeled and minced
1/4 cup ginger, peeled, grated and chopped
1 cup water
1 cup tamari soy sauce
1/4 cup fish sauce
1/4 cup sambal
1/4 cup palm sugar
Mix ingredients in a large sauce pot and bring to a boil for one minute. Chill and do not strain.
