Start's Tomato Quinoa Soup

Chef Erin McKool from Start makes a delicious quinoa soup for Good Day.

Start's Tomato Quinoa Soup

5 whole (fresh) tomatoes
¼ White Onion
1 ½ cups diced celery
1 ½ cups diced carrots
1 ½ tsp salt
1/8 tsp black pepper
1 minced garlic clove
1 ½ TBL unsalted butter
½ quart chicken broth
4 cups cooked quinoa
*4 cooked chicken breasts, diced (optional)
*2 avocados, diced (optional)
*chopped cilantro for garnish (optional)

Cook celery and Carrots in butter until veggies begin to be translucent. (Approx. 3-5 min.) Set aside. Cut Tomatoes into 1/8's also use the end pieces! Cut Onion into quarters. Put tomatoes and onion into a blender. Add salt, pepper and garlic. Blend until frothy. Pour blender ingredients, celery and carrots into a saucepan, along with the chicken broth. Bring to a boil, then immediately turn down to simmer.
Just prior to serving, add quinoa, and stir. In each serving bowl, add optional ingredients (chicken, avocado, and cilantro.
