Pizza lovers, this is your month! Rachel Salinas from California Pizza Kitchen returns to Good Day to help celebrate National Pizza Month with a recipe for shrimp scampi pizza.
Shrimp Scampi Pizza
12" pizza crust
2 TBL all-purpose flour
1 TBL extra virgin olive oil
2 tsp minced garlic
2 TBL caramelized onions
½ cup shredded mozzarella cheese
½ cup shaved Romano cheese
½ cup shrimp, pre-cooked and sliced lengthwise
2 TBL grated Parmesan cheese
½ tsp red chili flakes
½ TBL fresh oregano
¼ cup arugula
½ TBL fresh lemon juice
Pre-heat your pizza oven to 450 degrees and place a baking stone or pizza metal on the lowest rack.
TOPPING YOUR PIZZA
Stretch your pizza out to 12". Be sure to leave an outer rim of 1" all the way around. Place it on a pizza peel sprinkled with flour.
Spread olive oil and garlic over the base of the pizza dough. Next, add the mozzarella and then the Romano cheese. Finally, top with the shrimp, Parmesan and red chili flakes.
COOKING YOUR PIZZA
Bake pizza approximately 10-15 minutes or until heated through and crust is golden brown. Rest for 2 minutes and slice. Garnish with oregano, arugula and squeeze fresh lemon juice over the top.
