Seared Sesame Crusted Tuna

Chef Carlos Capistran from Shinsei makes seared crusted tuna with green tea soba noodles, stir fry sauce, sautéd shiitake mushrooms, shallots and scallions.


Seared Sesame Crusted Tuna

#1 Sashimi Grated Ahi tuna 3oz.
Green tea soba noodles 2 oz.
shiitake mushrooms 1 oz.
shallots 1oz.
scallions  .5oz.
stir fry sauce 2 oz.
togarashi 2 Tbsp
sesame seeds .5 cup
olive oil 1 Tbsp
Chives: garnish

Seasoned tuna with togarashi thoroughly Press sesame seeds on top of tuna and seared to medium red. Add oil to a pan, when oil is hot, sauté mushrooms, shallots and scallions for about 30 seconds. Add already cooked noodles and yuzu sauce, cook for 30 seconds. Place soba noodles and the rest of the ingredients on a plate. Cut tuna as big as you like and place it on top of noodles, add chives for garnish. Serve hot.
