Roast Beast Burger with Who Hash

Roast Beast Burger

Wheat bun

Who Hash

2 medium sized Organic Yams or Sweet Potatoes (not canned) diced in smalls squares
Organic Olive Oil
½ cup Roasted Organic Crimini Mushrooms (rough chop)
¼ cup Organic White Onion (diced)
5 slices All Natural Bacon (diced)
Kosher Salt
Ground Black Pepper
Cayenne Pepper to taste
12 oz of your favorite Local Porter Beer, we recommend Saint Arnold's Christmas Ale
2/3 cup Vermont Maple Syrup
1 tsp Organic Apple Cider Vinegar

Preheat oven to 500 degrees (broil), place sheet pan in oven to preheat.

Toss yams with 1 tbsp olive oil, and dashes of salt & pepper. Once oven is finished heating, pull out pan and spread yams evenly throughout. Place in oven for 5 min., then stir and rotate pan for another 5 min.

While yams are baking, pour 1 tbsp of oil into a sauté pan over medium heat. Let warm then add bacon. Add onion then salt & pepper, cook until onions are clear. Add mushrooms and heat until cooked throughout.

Increase to medium-high heat and add the local porter (about ¼ cup). Stir for 2 minutes or until porter reduces to a syrup, add yams (at room temp), 2 dashes cayenne pepper, and maple syrup, then stir.

Lower to medium-low heat. Simmer 5-7 minutes until the liquid has reduced by half.

Stir in apple cider vinegar.
