Quesadillas de Huitlacoche

Chef Gabriel DeLeon from Mi Dia From Scratch makes Huitlacoche quesadillas with guacamole. His restaurant blends traditional Mexico City recipes with modern Santa Fe and Tex Mex flavors.
 

Quesadillas de Huitlacoche (Mexican Truffle)

2 tablespoons diced onion
¼ cup roasted tomatoes diced
3 tablespoons huitlacoche
¼ cup diced roasted poblanos
1 tablespoon diced serrano
¼ cup roasted corn
2 tablespoon cilantro
2 tablespoon epazote
2 tablespoon garlic
pinch of salt salt
1 tablespoon olive oil
7 blue corn tortillas or regular corn
8 ounces queso asadero or substitute jack cheese
Mexican crema as needed

Heat a large saute pan with olive oil. Lay tortillas on a warm griddle & add 2 tablespoons of cheese.

While the cheese is melting, add onion, tomatoes, poblanos, corn, huitlacoche, serrano to saute pan.

Add rest of ingredients mix well & remove from heat. Place a spoonful of veggies on tortillas.

Fold all tortillas in ½ except one.

To plate, stack quesadillas on top of one another, top with the open faced quesadilla. Garnish with a drizzzle of crem & cilantro.
