Potato Pancakes

Chef Richard Chamberlain from Chamberlain's Steak & Chop House stops by Good Day to make potato pancakes with Kobe bacon, smoked Muenster cheese, chives and sour cream in honor of Addison Oktoberfest.


Potato Pancakes

1-cup flour
1-cup whole milk
4 eggs
3 tablespoons melted butter
½ teaspoon black pepper
3 tablespoons sugar
¼ teaspoon baking powder
½ teaspoon salt
1 tablespoon chopped fresh parsley
2-½ cups cubed Yukon baked potatoes
¼ cup cooked Kobe beef bacon (drippings reserved)
¼ cup smoked Muenster cheese
¼ cup sour cream
3 Tablespoons chopped chives
3 Tablespoons canola oil

In a mixing bowl, combine milk, butter and eggs and whisk well. In a separate bowl, combine flour, sugar, pepper, baking powder, and salt. Mix well. Combine the two and stir just to combine. Fold in potatoes and parsley. Heat non-stick pan over medium heat. Add canola oil and bacon drippings. Ladle ¼ cup potato pancake mix into skillet to form 6-8 pancakes. Cook until golden brown on both sides. Remove to platter and top with chive sour cream, smoked Muenster cheese, Kobe bacon and chives.
