Peanut Butter Pie

Peanut Butter Pie

Chocolate Graham Cracker Crust
1 ½ cups finely ground chocolate graham crackers
1/3 cup granulated sugar
6 TBSP melted butter

Mix the chocolate graham cracker crumbs, sugar, melted butter until well blended.  Press into a 9" pie pan, making sure the crust is tightly compressed and even.  Bake at 375 degrees for about 7 minutes then allow to cool before use.

Chocolate Ganache
8 oz bittersweet chocolate
1 1/3 cups heavy cream

In a double boiler slowly melt the chocolate.  Heat the heavy cream in a separate pot.  Pour the heavy cream over the melted chocolate and fully combine with a wooden spoon.  While still hot pour the chocolate into the bottom of the pie crust, making sure the chocolate is even and level.  Transfer to the freezer for 1 hour.

Peanut Butter Pie Filling
10 2/3 oz powdered sugar
1 1/3 lbs crunchy peanut butter
1 lb cream cheese, room temperature
1 tsp vanilla extract
2 2/3 cups heavy cream

In an electric mixer with whisk attachment, whip the heavy cream until soft peaks form.  Reserve the whipped cream in the refrigerator until needed.  Using the paddle attachment whip the peanut butter, powdered sugar and vanilla until fully combined.  Using a rubber spatula, fold the whipped cream into the peanut butter mixture until fully combined.  Put 2/3 of the peanut butter pie filling into the pie crust and place in the freezer for 1 hour, until the pie filling is firm.  Then add the other 1/3 of the filling.  Store in the refrigerator overnight.

Bittersweet Chocolate Sauce
4 oz bittersweet chocolate
4 oz unsalted butter
½ cup light corn syrup
2 ½ cups heavy cream
½ cup cocoa powder
1 TBSP vanilla extract
2 ½ cups granulated sugar

Melt the bittersweet chocolate, butter and corn syrup in a double boiler.  Heat the heavy cream, cocoa powder, vanilla, and sugar in a separate sauce pot until it begins to steam and thicken.  Pour the heavy cream mixture into the corn syrup mixture one cup at a time until they are fully combined.  Remove from the stove and allow to cool to room temperature.
