Mini Barbecue Chicken Pizzas

Mini Barbecue Chicken Pizzas
Total prep and cook time: 30 minutes

Serves 6-8 people (easily doubles)

Pizza ingredients:
3 large potatoes
2 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup grated cheddar cheese
1 lb. pulled chicken
1.5 cups barbecue sauce

Sauce ingredients:
1 tablespoon butter
1 tablespoon flour
1 cup milk
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 garlic clove, minced
1 tablespoon fresh basil, minced
1/4 cup parmigiano-reggiano cheese, shredded

Pizza directions:
1. Preheat oven to 400°F.
2. Cut each potato into 6-8 slices about ½ inch thick. (You can discard the ends of each potato.)
3. Brush each potato slice with olive oil and sprinkle with salt and pepper. Lay slices on baking sheet lined with parchment paper or foil and bake for 10 minutes. (Prepare the sauce while the potatoes are in the oven.) After
10 minutes, turn the slices over and bake for another 8-10 minutes until golden and crisp. Watch carefully the last 2-3 minutes!
4. Top each potato slice with 1 teaspoon of the white sauce, pulled chicken, and cheddar cheese.
5. Bake for another 5-7 minutes or until the cheese has fully melted.
6. Top with barbecue sauce and enjoy!

Sauce directions:
1. Heat butter in small sauce pan. Add flour and stir until thoroughly mixed.
2. Slowly whisk in milk, adding gradually. Stir in remaining ingredients. Sauce will thicken upon standing.
