Chef Lincoln Engstrom from Texas Motor Speedway stops by Good Day to show off the Hawg Heaven Three Little Pigs. It's a skewer featuring smoked bacon, pork tenderloin and grilled chorizo links.
Hawg Heaven Three Little Pigs
1 ea Pork Tenderloin, silver skin removed
2 TBL Smoked Paprika Dry Rub, Recipe Follows
6 ea Sliced Bacon
4 ea Mini Sweet Peppers, Grilled
2 ea Chorizo Links, Grilled
2 ea 12" Bamboo Skewers
Dust Tenderloin with dry rub and let marinate at least 20 minutes. Lay out 6 slices of bacon and wrap the tenderloin with the bacon. Roast at 375, about 40 minutes or internal temp of 140. Let rest. Slice tenderloin into six medallions and put on skewer alternating with chorizo and baby sweet peppers.
Smoked Paprika BBQ Rub
1 lb brown sugar
½ lb kosher salt
1 cup smoked paprika
½ cup ground cumin
¼ cup granulated garlic
2 TBL ground black pepper
Combine all the ingredients and store in an air tight container.
