Fried Brie Biscuits

Landon Amis, who is known as Papa Goat at Rodeo Goat, stops by Good Day to make fried brie biscuits. They call these goat balls at the restaurant.
 

Fried Brie Biscuits

Blackberry Compote

3 cups Blackberries
1/3 cup Sugar
½ cup Water
1 ½ tbsp Fresh lemon juice

Using a sauce pan bring water, sugar, lemon juice, and blackberries to a boil. Reduce heat and allow to simmer for 10-15 minutes. Allow to cool and then place in food processor or blender. Blend to desired consistency.

Biscuits

Pre-packaged Biscuits - 8 each
Brie Cheese - 8 ounces, cut into 4 pieces
Flour - as needed
Powdered sugar - as needed
Oil for Frying

Cut biscuit dough in to 4 equal parts. Wrap one part of biscuit dough around 1/4 ounce of Brie. Roll dough ball in flour and place onto baking sheet. Cover with plastic wrap and place into freezer until ready to cook.

Using a Fry Daddy or stock pot bring shortening to a temperature of 350 degrees. Place dough ball into the fryer and cook until golden brown 4-5 minutes. Place onto napkin to absorb excess shortening.

Place fried dough balls into bowl, drizzle with compote and dust with powdered sugar.
