Fresh Avocado Recipes

Chef Katie Horne from Wild Salsa shares two great recipes for fresh avocado. Wild Salsa has three locations open in Downtown Dallas, Downtown Fort Worth and Fairview. They feature regional Mexican flavors using locally sourced fresh ingredients.

Avocado Watermelon Salad

1 small watermelon, cubed into bite-size pieces (about 2 lb)
4 avocado, skinned, seeded, and chopped bite size pieces
2 limes, cut in half
1 T salt
1/2 bunch cilantro leaves, chopped fine
4 oz goat cheese (fresh or crumbles)

Combine all ingredients into a large bowl and mix until just incorporated (do not over mix!)

Avocado Toast

2 Bollilo buns, cut in half
2 avocado, sliced
1 Cup pico de gallo (recipe below) 
1 Cup refried beans
1/4 Cup toasted quinoa
1/2 Cup Monterrey Jack cheese, shredded
2 jalapenos, sliced

Toast bollilo in a toaster or broiler until desired crispiness Spread the refried beans onto the toasted bollilo. Top with avocado and desired ingredients. 

Pico De Gallo

3 vine-ripened tomatoes, small dice
1 lg sweet onion, small dice
2 jalapenos, seeded and small dice
¼ Cup lime juice
2 Tablespoons salt

Combine all ingredients and let sit for 2 hours.

The toast is going to be a variation of all those ingredients :-)
