Cornmeal Fried Catfish

It's National Catfish Month! Aaron Staudenmaier from Lovers Seafood Market stops by Good Day to show you how to make the perfect dredge and sauce for fried catfish.

Fish Dredge for 8

2 cups corn meal
2 cups wondra flour
2 cups all purpose flour
2 cups corn starch
2 tablespoons granulated garlic
2 tablespoons granulated onion
¼ cup blackening spice
⅓ cup iodized salt
1 tablespoon black pepper, coarse ground

Combine all ingredients and mix well.

Poblano Tartar Sauce

1 ½ cups mayonnaise
½ cup capers
2 tablespoons whole grain mustard
½ cup poblano pepper, roasted, peeled and diced
½ cup lemon juice
1 tablespoon mixed herbs, chopped
1 tablespoon sea salt

Combine all ingredients and chill for one hour.
