Chicken Goodfella

Sal Russo from Goodfella's makes a delicious chicken alfredo.


8 oz. cubed chicken breast
1.5 oz. shallots
1.5 oz. scallions
1 oz. red onions
½ teaspoon garlic
2 oz. white wine cooking wine
1 oz. unsalted butter
10 oz. heavy whipping cream
4 oz. blended oil
2 oz. grated parmesan cheese
6 oz. penne pasta
salt & pepper to taste
fresh parsley for garnish
flour for coating chicken


Preheat 10" saute pan with oil. Add lightly floured cubed chicken to the hot saute pan.

Sprinkle with salt & pepper.   Cook 2 minutes on each side.

Add chopped garlic.  Then add shallots, scallions & red onion mix. Cook for 3 minutes.

Add butter,  then add white cooking wine- wait to burn off.  Add heavy cream.   Add grated cheese.

Toss in cooked penne pasta.  Plate and garnish with fresh parsley.
