Chocolate Avocado Mousse

Pastry Chef Laurel Wimberg from Mudhen makes a healthy chocolate mouse using avocado.


Chocolate Avocado Mousse

3-4 ripe avocados (@8 oz pulp)
1/3 cup almond milk
1/2 cup honey
1 Tablespoon vanilla extract
1/4 teaspoon salt
1/2 cup dark cocoa powder
3 oz dark chocolate, melted over a double boiler

Blend all ingredients except melted chocolate in a blender or with an immersion blender until smooth. Scrape down container & add melted chocolate. Continue to blend until creamy & silky smooth. Serve with fresh berries or toasted nuts.
