Erin Mckool from Start makes a healthy and hearty salad. The recipe below serves two.
Mediterranean Quinoa Salad
½ cup chopped parsley
½ cup chopped cilantro
1 cup chopped broccoli crowns
½ cup red onion, diced small
½ cup cherry tomatoes, sliced in half
¼ cup pitted Kalamata olives, sliced in half
2 cups white quinoa
½ cup vinaigrette dressing (recipe below)
¼ cup feta cheese
Toss quinoa together with olives, parsley, cilantro, broccoli, red onion and cherry tomatoes.
Pour vinaigrette dressing over quinoa mix and blend. Gently fold in the feta cheese.
1 cup extra virgin olive oil
1 2/3 cups canola oil
1 cup apple cider vinegar
2 tsp lemon juice
2 tsp lemon zest
1 level TBL glove garlic minced
½ tsp dry mustard
½ tsp black pepper
Put all ingredients in a mixing bowl and mix until thoroughly blended.
