Croque Madam and Apple Sweet Potato Hash

Chef Tony Fiahlo from PepperSmash in the Shops at Legacy makes a southern style brunch.

Croque Madam

2 slices of Texas Toast
1 egg sunny side up
6 oz Pulled Pork
1 oz gruyere fonduta
1.5 tbl whole grain mustard
1 tsp chives


Apple/Sweet Potato Hash

2 lb Sweet Potato, diced
Salt TT
Pepper TT
1 tsp Cinnamon
1/8 cup oil
4 oz bacon, diced
6 oz onion, diced
1/2 lb apple, diced
2 oz chives, sliced

1. Season sweet potato with salt, pepper, and cinnamon.  Toss with oil.  Roast 8 minutes.

2. Add 2 oz oil saute pan, add bacon and render fat. Remove bacon when rendered.

3. Add roasted sweet potato to saute pan to carmelize.  Add onion and apple and cook through.

4. Finished with bacon and sliced chives.
