Chef Scott Hoffner from J. Macklin's Grill shares the recipe for eggrolls at home.
3 chicken breasts, grilled and chilled
1 ½ cup shredded mozzarella cheese
1/3 cup buffalo sauce
8 eggroll wrappers
Eggwash(1 egg beaten)
Finely dice chicken breasts and mix with the shredded mozzarella and buffalo sauce thoroughly.
Spoon 2-3 ounces of the chicken mixture onto the center of the eggroll wrapper.
Brush all four corners of the wrapper with eggwash. Fold in corners and roll together. Roll completed eggroll into the cornstarch to give a light coating.
Deep Fry eggrolls at 350 degrees until golden. Serve with your favorite bleu cheese or ranch dressing, carrots, celery, and buffalo sauce.
