Fish Dredge for 8
2 cups corn meal
2 cups wondra flour
2 cups all purpose flour
2 cups corn starch
2 tablespoons granulated garlic
2 tablespoons granulated onion
¼ cup blackening spice
⅓ cup iodized salt
1 tablespoon black pepper, coarse ground
Combine all ingredients and mix well.
Poblano Tartar Sauce
1 ½ cups mayonnaise
½ cup capers
2 tablespoons whole grain mustard
½ cup poblano pepper, roasted, peeled and diced
½ cup lemon juice
1 tablespoon mixed herbs, chopped
1 tablespoon sea salt
Combine all ingredients and chill for one hour.
