Watermelon Salad

Chef Jim Dunleavy from Eatzi's stops by Good Day to make a watermelon salad with hearts of palm, red onion, jalapeno, mint, basil and hot & sweet dressing. There's a new Eatzi's location open now in Fort Worth's University Park Village.


Watermelon Salad

1 ¼ Lbs Watermelon
1 Small Red Onion
1 Small Jalapeno
½ Lb Hearts of Palm
6-8 Mint Leaves
4-6 Basil Leaves
½ Cup Hot and Sweet Dressing
¼ Tsp Kosher Salt

Clean and dice the watermelon into ½ inch pieces. Finely dice the onion and the jalapeno. Slice the hearts of palm into ¼ inch pieces. Chiffonade the mint and basil. Place all ingredients in a large bowl and mix well.


Hot and Sweet Dressing

3 Tblsp Sugar
3 Tblsp Rice Wine Vinegar
1 Tblsp Lime Juice
1 Tsp Fish Sauce
1 Tsp Canola Oil
Pinch of Red Chili Flake
Small clove Garlic; Minced
¼ Tsp Lemon Grass; Minced

Combine all ingredients and whisk together.
