Some people like to have seafood on Christmas Eve. If you are one of those people, here's a fresh idea from fishmonger Ryan Oruch with Sea Breeze Fish Market.
Orange Parmesan Crusted Haddock
1 lb. fresh haddock
Salt & pepper
2 oranges, zested and juiced
¾ c. panko breadcrumbs
¼ c. Parmesan cheese
½ tsp. parsley
¼ tsp. ground thyme
½ cup flour
1 egg beaten
Put the haddock in a ziplock bag and add the orange juice, and marinate for 30 minutes.
Mix the breadcrumbs and Parmesan cheese and herbs together.
Remove haddock from marinade and pat dry.
Season the fish with salt and pepper, dredge in flour mixture, then place in egg mixture, then in breadcrumb and cheese mixture and orange zest.
Saute in pan on medium heat for three- four minutes depending on thickness of fish. Turn and repeat until the fish is cooked through, another 2-3 minutes.
