Sweet Potato Casserole

Chef Eric Justice from Cotton Patch Cafe is back on Good Day to make a dessert or side for your Thanksgiving meal.


Sweet Potato Casserole

4 lbs Sweet Potatoes, peeled
3 Eggs
1/3 cup Sugar
1/4 cup Maple Syrup
1/4 cup Unsalted Butter, melted
1/2 tsp Vanilla Extract
1 tsp Salt
1/4 tsp Nutmeg
Marshmallows, to cover pan

Peel potatoes and cut into 2" cubes. Place in stock pot with hot water until the potatoes are covered.

Boil for 20 to 25 minutes or until tender. Drain in colander.

Mix all ingredients (except marshmallows) together in a mixing bowl with a wire whip.

Portion equally into baking pan. Bake at 350°F for 30 minutes in the convection oven.

Cover the entire surface of casserole pan with marshmallows.

Place casseroles back in the oven for 5-10 minutes until marshmallows are browned.

Serve.
