The turkey doesn't have to be the centerpiece of the meal. Chef Jason Harper from TRIO New American Cafe shows you a simple way to dress up a side.
Cider Bacon Brussels
3 cups trimmed blanched Brussels sprouts
1/4 cup olive oil
1/2 cup thick diced bacon ( pre cooked until crispy and chewy)
1/2 cup cider glaze ( recipe follows)
Heat oil till almost smoking, add Brussels and let sear until golden brown and crispy on one side, 2 minutes, the toss occasionally for another 2 minute, reduce heat if burning occurs. Add cooked bacon, cook for additional 30 seconds then season with s&p and add cider glaze. Toss and serve
4 cups apple cider
2 cups cider vinegar
1 cup brown sugar
2 cups blonde ale
Reduce until syrup consistency. Let cool to room temp.
