Prosciutto Wrapped Fried Mozzarella

Chef Kenny Bowers has a new restaurant called Kenny's East Coast Pizza opening soon in Plano. He stops by Good Day to promote it with a recipe for a fried favorite.
 

Prosciutto Wrapped Fried Mozzarella

10 ea mozzarella sticks (approx. 4 x ½ inch thick)
5 slices prosciutto (1/2 slice for each stick)                             
A/n flour
4 ea  whole eggs beaten
A/n  Italian bread crumbs  
1 cup tomato sauce
2 tsp parmesan (grated)
1 cup olive oil (for frying)

Wrap each mozzarella stick evenly with prosciutto ½ of each slice. 

Gently roll in flour, then in egg then in bread crumbs making sure cheese is completely covered.

Place on parchment paper and put in refrigerator for at least 30 minutes.  (this will make frying easier).

Pour oil in a large skillet with approximately ½ inch deep of oil and turn heat to medium.  When you think oil is hot sprinkle a little flour in the oil it will bubble.

 Carefully place cheese sticks in pan.  Fry on all sides until golden. You will see some cheese start to ooze out.  Place on paper towels to absorb excess oil.  Place on plate, sprinkle with parmesan, serve with tomato sauce for dipping.
