Meyer Lemon Chicken Sandwich

Chef Chase Foxworth from the East Hampton Sandwich Company stops by Good Day to make a lunch favorite.

Meyer Lemon Chicken Salad

Oven Roasted Chicken (Pulled), 1 Breast
Parsley (Minced), 1 TBS
Celery (Fine Chopped), 0.25 Cups
Lemon Vinaigrette, 6 TBS
Salt, 2 tsp
Black Pepper, 1 tsp
Garlic Powder, 2 tsp
Red Pepper Flakes, 2 tsp

Mix all ingredients together well.

Serve on chibatta bread dressed with roasted red pepper sauce.                                 


Roasted Red Pepper Sauce   

Mayonnaise,2 TBS
Roasted Red Pepper (Fine Diced), 3 TBS
Lemon Juice, 1 TBS

Mix all ingredients together well.                    


Lemon Vinaigrette    

Lemon Juice, 0.25 Cups
White Wine Vinegar, 0.25 Cups
Granulated Sugar, 2 tsp
Dijon Mustard, 2 tsp
Kosher Salt, 1 tsp
Red Pepper Flakes, 0.25 tsp
Olive Oil, 1 Cup

Mix all ingredients together well.
