Mediterranean Salad

Chef Thad Kelley from Studio Movie Grill talks about eating healthy at the movies. He joins Good Day to celebrate National Salad Month.
 

Mediterranean Salad

Arugula
Spinach baby leaves
Kale, chopped
Cucumbers
Roasted Red bell peppers
Kalamata olives, cut
Heirloom Tomatoes, sliced
Feta
Mint, choped
Salt/pepper
Pisatchios, chopped
Pistachio dressing


Pistachio Pesto Dressing

2lbs Fresh Spinach
1/2 lb Fresh Basil
1/8 lb Fresh Mint
2 cups Olive OIl
2 tsp Balsamic Glaze
1 Tbs Italian Seasoning
2 Tbs Salt/Pepper Blend
12 Lemon - Fresh lemon juice
1/4 cup Pistachios, shelled

Place spinach with 1/4 cup olive oil in blender . Keep adding spinach and oil when needed to blend. Add Basil, Mint, and slowly add the rest of oil until all herbs are completely smooth. Stop and scrap with spatula, when needed. If dressing is too think, continue to add additional oil, until smooth like a sauce. Add glaze, pistachios and seasonings. Blend for 30 seconds.
