Samara Houston from Baby Cakes makes cheesecake in a cup for the No Tie Dinner & Dessert Party. The event is Saturday at the Frontiers of Flight Museum.
Banana Split Cheescake Cups
No-bake Cheesecake (Easy 2 Step Homemade recipe or 2 packs of Jell-O No Bake Cheesecake)
3 cups of Mini Vanilla Wafers
1 cup of fresh Strawberries, diced
1 16oz crushed can of Pineapple, drained
2 Fresh Banana, sliced less than ¼ inch width-wise and dipped in lemon juice
1/2 cup Chocolate Syrup (use pourable Chocolate Ganache for a richer Chocolate)
1/2 cup Nut Toppings
1 can of Whipped Cream
18 Maraschino Cherries
18 9 oz. clear plastic cups
Fruit, nuts and flavored syrups can be added or omitted to suit individual tastes!
Prepare and gather all necessary ingredients. Neatly arrange them in your work space. This makes the rest of the assembly process smoother.
Place enough mini wafers to cover the bottom of the cup- break/crush some wafers if need be, for good coverage.
Place a spoonful (approx. a TBS) each of diced Strawberries and crushed Pineapple on top of the Wafers, lightly spreading both out.
Prepare No-bake Cheesecake according to instructions. Spoon Cheesecake mixture into cup, filling 3/4 of the way.
Add sliced Bananas to cover the top and drizzle with Chocolate. (Don't forget to dip Bananas in lemon juice to keep from turning brown.) Refrigerate for a minimum of 1 hour.
Before serving, top with Whipped Cream, Nuts and a Cherry on top! Serve chilled.
Makes 18 single serve cups.

Easy 2 Step Homemade No-Bake Cheesecake
14 oz sweetened condensed milk
8 oz sweetened whipping cream
1/3 cup lemon or lime juice
8 oz cream cheese, softened
In a mixing bowl, combine all ingredients except lemon/lime juice. Use a hand mixer on low speed and blend well, for approximately two minutes. Lastly, add lemon or lime juice. The citrus will begin to stiffen the mixture almost immediately.
