Chorizo corn

Dee Lincoln Prime at The Star in Frisco shares chorizo corn recipe

2 lbs  Fresh shucked corn         
2 tbls  Garlic, Minced        
3 tbls  Shallots, Minced    
1 Pint  Heavy Cream        
1/4 lb  Butter, Unsalted            
2  Lime, for juice        
1/5 lb Butter, Unsalted        
1/4 Chorizo, cooked and drained    
1 cup Fried Onions (for garnish)    
2 tbsp Cilantro or Parsley (for garnish)    

Preparation Instructions: 

1.   In large pot melt first et of butter and saute the garlic, shallots and corn.            
2.   Add heavy cream and reduce until thick.            
3.   Fold in the remaining butter, season with     lime juice, salt and pepper.            
4.   Fold in Chorizo            
5.   Place in serving bowl            
6.   Top with fried onions and chopped herbs
