Chef Mike Smith from Utopia Food and Fitness is in the studio making yummy sweet potato pancakes with a fresh strawberry sauce.
Sweet Potato Pancakes
1 cup sweet potato (boiled and pealed)
2/3 cup egg whites
1/2 cup flour (all purpose)
2 tsp honey
1/4 tsp salt - kosher
1/4 tsp cinnamon (ground)
1/4 tsp baking soda
1/4 cup water (if needed)
Place all dry ingredients in a mixing bowl (flour, salt, cinnamon and baking soda) and mix well. Add remaining ingredient (sweet potato, egg whites and honey) puree with hand mixer. Add water as needed for consistency of batter. Spray a hot, non-stick pan with cooking spray. Add 1/4 to 1/5 pancake batter and cook until both sides are lightly browned.
2 tbsp fresh strawberries (pureed and strained)
2 tsp fresh strawberries (minced)
2 tbsp fresh Granny Smith apple (minced)
Add pureed strawberries and minced strawberries. Drizzle strawberry sauce over pancakes and sprinkle with minced apples. Enjoy!!
