Cotton Patch TX Skillet Cornbread, Pumpkin Crunch

Texas Skillet Cornbread

Ingredients:

4 eggs

¼ cup sugar

1 tbsp. salt

6 cups shredded cheese

3 cups pickled, chopped jalapeños

3 cups frozen corn (thawed)

3 cups pico

6 cups water

1 bag corn muffin mix
 

Mix and Bake using directions on muffin mix packet.

 

Cotton Patch Pumpkin Crunch

7 eggs

1 tbsp. cinnamon

1 tbsp. vanilla

3 lbs. canned pumpkin

2 cups non-dairy creamer

4 ½ cups sugar

2 lbs. yellow cake mix

1 lbs. spice cake mix

3 cups candied pecans

1 ½ lbs. melted margarine
